Gluten Free Banana Muffins (dairy free!)
Prep Time 10 mins Cook Time 20 mins Total Time 30 mins Serves 10

Ingredients

Wet Ingredients
1 heaping cup mashed, ripe banana (from about 3 medium bananas)
2 eggs
¼ cup pure maple syrup
2 teaspoons vanilla extract

Dry Ingredients
1 cup packed fine blanched almond flour
1 cup gluten free oat flour
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
1/3 cup mini chocolate chips
2-3 tablespoons mini or regular dairy free chocolate chips, for sprinkling on top

Instructions

Preheat oven to 350 degrees F. Line a muffin tin with 10 muffin liners and spray the inside of the liners with nonstick cooking spray. This helps to prevent sticking.
In a large bowl, mix together mashed banana, eggs, maple syrup and vanilla extract until smooth.
In a separate large bowl, whisk together the almond flour, oat flour, baking powder, cinnamon and salt until well combined.
Add dry ingredient to wet ingredients. Fold in ⅓ cup chocolate chips.
Divide batter evenly between liners. Sprinkle the tops of the batter with extra chocolate chips. Bake for 20-25 minutes or until tester comes out mostly clean with a few crumbs attached. Transfer muffins to a wire rack to allow them to cool. Enjoy! Makes 10 muffins.

Recipe Notes

To make as a bread: Pour batter into an 8x4 inch loaf pan greased and lined with parchment paper. Bake for 40-50 minutes until toothpick comes out clean.

To make vegan: use two flax eggs instead of regular eggs. We haven't tested but we think it should turn out!

We made this tonight. It was delicious! We used some of the pretzel bread that we got at the Marshall Farmer's Market.

Ingredients:

2 cups stale pretzel bread
1/2 to 1 pound diced ham
1/2 sweet onion, diced
2 1/2 cups shredded cheese (about 1/2 pound)
1/4 cup parsley flakes

I made these tonight. While I liked the Brownie Batter Granola Butter smoothie, my partner Doug wasn't fond of the texture. So I put most of the rest into a batch of cookies, which we both love.


"Granola Butter Cookies"

Ingredients:
1 1/4 cups whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt

Ingredients:

- 1/2 cup of vegetable oil
- 1/2 cup of caster sugar
- 2 large eggs
- 2 teaspoons vanilla essence
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/2 cup of milk
- 3/4 cup  of frozen blueberries
- 1 1/2 cups plain flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt

Optional: Some lemon juice + icing sugar for glaze
 
Method:

1. Preheat oven to 180 degrees celsius. Line loaf pan with baking paper.   

2. Mix oil and sugar with hand mixer. Add zest, juice, vanilla, eggs, milk. Mix together. 

3. Combine flour, baking powder, salt. Slowly add this to the wet mix. Add blueberries and fold gently with a spatula. 

4. Pour into the loaf pan. Cook 40-45 minutes. 

Optional: Combine icing sugar with lemon juice to make a glaze and pour over the loaf when fully cooled.

Dry Ingredients:

2 cups (400g) sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons bicarbonate of soda
1 teaspoon salt
218g plain flour
85g cocoa

 
Wet Ingredients:
 
2 large eggs
1/2 cup of oil
1 cup of milk
1 tablespoon of lemon juice
2 teaspoons vanilla essence
1 cup of boiling water

Ingredients for Whipped Ganache:

200g dark chocolate
300 ml double cream
2 tablespoons caster sugar
 
Cake Method:

1. Combine milk and lemon juice in a bowl and leave till later in recipe. This will become buttermilk, which helps keep the cake moist.

2. Preheat oven to 175 degrees. Line two round 8 inch pans very well with baking paper. The batter is quite liquid, so the pans will leak if not lined well.

3. Stir together dry ingredients.

4. Add eggs, buttermilk from step 1, oil, and vanilla. Mix until combined.

5. Stir in boiling water. The batter will be thin.

6. Divide the batter between the two pans. Bake 25 minutes.

7. Cool in pan for 5 minutes then rack.


Whipped Ganache Method:

1. While the cake is cooking, finely chop the chocolate and put into a heatproof bowl.

2. Heat cream and sugar in a saucepan over a medium heat, stirring until the sugar has melted into the mixture.

3. Turn up the heat and bring to boil, then remove from the stove.

4. Pour the cream mixture over the chocolate and whisk until glossy.

5. Leave until completely cool.

6. Beat with an electric whisk until stiff and lighter in colour. This should happen pretty quickly, so if you're having issues put the ganache in the freezer for 5 minutes and try again.

7. When the cakes are completely cool, spread the whipped ganache thickly over each cake and stack to make a double-layered cake.


Optional: put some raspberries over the top of the cake to add some tartness.

"Kitchen Sink Cookies with Maple Syrup and Chocolate Chips"


Ingredients:
1/4 cup butter, melted
1/3 cup light brown sugar, packed
1 tablespoon sunflower oil
2 tablespoons pure maple syrup
2 large eggs
1/2 cup cashew butter
1/2 teaspoon Vena's Fizz House Woodland Itty Bitter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon baking soda
2 cups quick oats
3/4 cup sweetened shredded coconut
1/4 cup honey-roasted sunflower seeds
1/4 cup pistachios, chopped
3/4 cup bittersweet chocolate chips

Pear, Walnut & Cheddar Puff Pastry Tart
PREP TIME 15 MINS COOK TIME 25 MINS TOTAL TIME 40 MINS SERVES 9

Ingredients

1 (9x13) sheet frozen puff pastry, thawed
8 ounces shredded spicy cheddar (we use Cabot Habanero cheddar)
2-3 ripe Bartlett pears (make sure they aren’t too ripe!), sliced
1 egg
1-2 tablespoons honey
1/4 cup chopped toasted walnuts
Flaky sea salt, for sprinkling on top

Instructions
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
Place the sheet of puff pastry on the prepared baking sheet and poke with a fork a few times all over.
Sprinkle the shredded cheese all over the puff pastry, leaving a 1 inch layer on the sides. Add on the sliced pears.
In a small bowl, mix together the egg with a fork and use a pastry brush to brush on the edges of the puff pastry crust. This will help to create a nice golden brown crust when baked.
Bake for 25-30 minutes until the pastry is deeply golden and crisp. Remove from the oven and drizzle with honey, sprinkle with walnuts and a little flaky sea salt. Use the parchment paper to transfer the tart to a cutting board. Cut into 9 large squares. Serve warm or at room temperature.

Recipe Notes
Store any leftover tart in an airtight container in the refrigerator for up to 5 days. Reheat in the oven until heated through.

I made these Tuesday night. They are similar to the Sunny Honey Cookies but with pumpkin puree instead of banana.

Today I made Sunny Honey Cookies. My partner Doug found some honey-roasted sunflower seeds, which are quite tasty, and I wanted to make cookies with them. I am very pleased with the results. :D


"Sunny Honey Cookies"

Ingredients:
1 1/2 cup whole wheat flour
1 1/2 cup all-purpose white flour
1 teaspoon baking soda
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 pinch of salt 

1/2 cup brown sugar
1/2 cup sunflower oil
1/2 cup honey
1 egg 

1 ripe banana, mashed
1/8 cup minced dried ginger
1/4 cup honey-roasted sunflower seeds

Cranberry Orange Ginger Scones
Serves: makes about 30-36 scones Prep: 25 Min Cook: 20 Min

Ingredients
3 3/4 c all-purpose flour
1/2 c sugar
4 1/2 tsp baking powder
1/2 tsp salt
2 tsp dried orange peel (very fine) or 4 teaspoon(s) fresh zested orange peel
1 1/2 c dried cranberries
1 1/2 tsp very finely chopped candied ginger (do not try to use just dried ginger as it will not work the same)
2 c whipping cream (for a less fat version you can use 1/2 & 1/2 but they won’t be as rich)
1/2 - 3/4 c milk

Directions
1 Spray 2-4 cookie sheets with non-stick spray. Preheat oven to 375*F.
2 In small bowl combine the cranberries and candied ginger with 1/2 cup of the flour. In large bowl mix together rest of flour, sugar, salt, baking powder, and orange peel. Combine both bowls into the large bowl.
3 In small bowl combine the cream and 1/2 cup of the milk. Add slowly to the dry ingredients and combine to make a soft dough. If needed add the remaining milk by tablespoonfuls to get a soft but workable dough.
4 Turn out onto lightly floured board and pat or roll into 3/4 inch thickness. Cut into triangles about 2 1/2 inches across at the base. A pizza wheel works well for this. Place on baking sheets. Bake 15-20 minutes until puffed, lightly golden browned and cooked through.
5 Serve with your choice of butter, cream, jams or jellies.

Stabilized Whipped Cream

Ingredients:

1 teaspoon unflavored gelatin
4 teaspoons cold water
1 cup heavy whipping cream
¼ cup confectioner’s sugar

Instructions:
In a small pan, combine gelatin and cold water; let stand until thick.
Place over low heat, stirring constantly, just until the gelatin dissolves.
Remove from heat; cool (do not allow it to set).
Whip the cream with the confectioner’s sugar, until slightly thick.
While slowly beating, add the gelatin to whipping cream.
Whip at high speed until stiff.

Makes about 2 cups of whipped cream.

New England Mincemeat Filling
(uses many native ingredients)

Ingredients:

2/3 cup apple cider (may substitute cranberry juice)
2 cups whole cranberries, fresh or frozen
1 cup raw cane sugar (or brown sugar)
2 teaspoons cinnamon, freshly ground if possible
½ teaspoon both allspice and ginger
1 cup currants
1 cup raisins
1 cup dried cranberries
2 medium apples
3 – 4 tablespoons brandy, port or maple whiskey
¼ cup maple syrup
2 tablespoons honey

Directions:

In a large saucepan, warm the apple cider and dissolve sugar over low heat. Wash, core, and finely chop or grate apples. Add the whole cranberries into the pot and stir to combine. Add cinnamon, ginger, and allspice, along with currants, raisins, dried cranberries, and apple.

Stir and simmer over medium low heat until mixture starts to darken and has absorbed most of the liquid, about 20 minutes. Stir occasionally. Remove from heat and add the brandy, port or whiskey, maple syrup, and honey. Beat well to incorporate everything and crush the cranberries slightly.

Spoon into sterilized jars and cover with lids. This will store in the refrigerator for several weeks.

May also be frozen for up to three months.

Simply use as you would any fruit pie filling.
