"Crockpot Smoked Turkey Leg with Beans"

Ingredients:
about 1 1/2 cups red kidney beans
water
1 Maggi cube
1 smoked turkey leg
1 bay leaf
1 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon rubbed sage
about 1 cup mixed dried mushrooms
1/2 sweet onion, chopped


Directions:

The night before, rinse about 1 1/2 cups red kidney beans and put them to soak in a bowl of water. If the water gets cloudy, change it.

The next day, drain and rinse the kidney beans. Sort through them and discard any that didn't swell up. (They should double or triple inside.) You can also discard any skins that have come loose.

In a crockpot large enough to hold the turkey leg, pour about 2 inches of water. Turn the crock on High. Add 1 Maggi cube.

Put the smoked turkey leg into the crock. Make sure there is enough water to cover most of the meat; it's okay if the end of the bone sticks above the water.

Add about half the kidney beans around the turkey leg. Add 1 bay leaf, 1 teaspoon thyme, 1/2 teaspoon oregano, and 1/2 teaspoon rubbed sage. Add the rest of the kidney beans.

Measure about 1 cup mixed dried mushrooms and add them to the crock.

Chop half a sweet onion and add the bits to the crock.

Cover and cook on High for about 4 hours, until the beans soften and the turkey meat falls off the bone.

Remove the bone, gristle, and tendons from the turkey meat. You can take out any big pieces of skin and fat too. Break up the meat into chunks and mix it with the beans and mushrooms. Serve in bowls or pour it over other things such as mashed potatoes, stuffing, or bread. It makes about 5-6 servings.


Notes:

This turned out excellent with tender meat and a smoky, savory flavor. Even my partner Doug, who is not a dark meat fan, really enjoyed this. It's a great choice when you want turkey but aren't cooking for a crowd.

I used red kidney beans because that's what I had. I didn't measure exactly but I think I had about 1 1/2 cups. You could also use other dry beans such as navy beans, pinto beans, or black-eyed peas.

Maggi is a type of seasoning cube similar to bullion. If you don't have any, you can substitue chicken or vegetable bullion -- or use chicken broth instead.

Turkey is a healthy meat, and dark meat has more nutrients than white. Smoking it creates a lot of flavor, which is released into the rest of this dish.

Dried mushrooms are perfect for crockpot cooking because they soften in hot water, becoming tender and delicious. You could also use fresh ones such as crimini or shitake.

Sweet onions are milder than hot onions. They offer flavor, vitamins, and fiber.

If you haven't bought gravy, you can use some of the flavorful liquid from this dish plus a thickener such as flour or cornstarch to make gravy. It already has plenty of seasoning so you don't need to add salt or spices.
