Cajun Gator & Wild Boar Homemade Sausage


Ingredients:

For the homemade sausage:

1 1/4 lbs Wild Boar Ground Meat
1 1/4 lbs Ground Gator Meat
2 1/2 lbs Ground 70/30 Pork
1 package Backwoods Cajun Fresh Sausage Seasoning

For the recipe:

8 links of Cajun Gator & Wild Boar Homemade Sausage
1/2 onion, diced
1 green pepper, diced
1 can red beans, rinsed and drained
2 tomatoes, chopped
4 cups cooked white rice

Directions:

For the homemade sausage:

Combine ground meat and seasonings in large bowl. Add seasonings and mix well with hands until thoroughly combined. Add water and mix until well combined. Place in Big Bite® Sausage Stuffer and stuff sausage using edible sausage casings.

For the sausage and rice recipe:

Add links of sausage to a large skillet with about a cup of water. Turn heat to medium and cover with lid. Continue to cook sausages, turning occasionally until done and internal temperature is 160°. Let water evaporate and add a little oil if desired and brown sausages. Remove from pan.

Add onions and green peppers to skillet. Sauce until tender crisp. Add tomatoes and beans. Slice sausage and add it back to the skillet. Heat through and serve over rice.
