Vegan Chicken Fried Mushrooms

Ingredients
20 - 25 oyster mushrooms (rinsed and the bottom hard part of the stem cut off)
Marinade/Gravy
6 - 8 cloves garlic
1 tablespoon herbes de provence
4 tablespoons soya sauce
2 tablespoons lemon juice
2 tablespoons balsamic reduction
½ tbsp vegetable bouillon
Pinch black pepper
2 tbsp cashew butter (for the gravy)
2 - 4 tbsp of water
Crispy Batter
½ cup aquafaba (the liquid from one can of chickpeas)
1 cup breadcrumbs
¼ cup nutritional yeast

Make the marinade: Whisk together minced garlic, herbs, soya sauce, lemon juice, balsamic reduction, bouillon, and black pepper until creamy smooth.
Wash the oyster mushrooms and toss them into the marinade. The mushrooms are like sponges and will soak up the marinade. Marinade for 30 minutes to overnight in a covered dish in the fridge.
Bread the mushrooms: Preheat oven to 475F. Line a stone baking pan with parchment paper.
Pour aquafaba into a small bowl (this will be the eggy mixture so the breadcrumbs stick to the mushrooms). Mix together the breadcrumbs, nutritional yeast, and black pepper in a second small and deep bowl.
Dip each mushroom in the aquafaba and coat well with the breadcrumb mixture.
Bake the mushrooms: Place each breaded mushroom ½ inch apart on the baking sheet. Bake for 15 to 22 minutes until crispy and brown. Broil for the last two minutes of baking.
Make the gravy: Do not discard the marinade (this is the base of the gravy). Add the marinade to a medium size pan. Add the cashew butter and 2 tablespoons of water. Whisk frequently until the cashew butter melts and the gravy begins to simmer and thicken. Simmer on low until the mushrooms are ready. Add additional water to the gravy if it gets too thick.
Drizzle the Chicken Fried Mushrooms with gravy and (optional) balsamic drizzle. Enjoy!
Notes
1) Gluten Free is using gluten free breadcrumbs.
2) Using a pizza stone instead of a baking sheet helps to make these mushrooms extra crispy.
