SAVORY BRAISED SUNCHOKES
3 slices bacon, diced
1 tablespoon olive oil
1 pound sunchokes, peeled (with the back of a spoon) and diced
½ red onion, peeled and sliced
Salt and pepper to taste
Add the olive oil and diced bacon to a cast iron pan and cook on medium low heat for about 7 minutes. Using a slotted spoon, scoop out bacon onto a paper towel lined plate.
To the cast iron pan, add the sunchokes and cook 20 minutes, stirring as needed.
Add the red onion. Continue cooking for an additional 10 minutes or until the vegetables are tender and lightly golden brown.
Toss in the crumbled bacon and a sunny side egg, if you like. Makes 3-4 servings.
