Ingredients
1 head large (6-7" dia.) cauliflower
3 stalks green onions, tops only
1 medium (approx 2-¾" long, 2-½" dia) green pepper
2 stalk small (5" long) celery
1 Tbsp lemon juice
½ cup Miracle Whip Free
¼ cup fat-free sour cream
2 tsp mustard seed
2 Tbsp cider vinegar
½ tsp salt
½ tsp ground black pepper
Directions
In a large bowl, combine green onion, green pepper and celery.
Cut florets from cauliflower head and steam for 4-6 minutes, just until tender but not mushy. Allow to cool.
Add cooled cauliflower to vegetable mix.
In a separate bowl, combine the Miracle Whip, sour cream, lemon juice, cider vinegar, mustard seed, salt, and pepper.
Coat cauliflower mix with dressing and stir. Chill until ready to serve.
