Vegan Eggnog

Vegan Eggnog
Ingredients:
3/4 cup almond milk
1/4 cup canned full-fat coconut milk (or more almond milk- will be less rich)
2 tbsp. agave nectar
1/2 tsp. pure vanilla extract
1/2 tsp. ground nutmeg (freshly grated, if possible)
1/8 tsp. ground cinnamon
pinch cloves (less than 1/8th tsp.)
pinch of xanthan or guar gum, optional (will not be as creamy without)
rum to taste (start with 1 tbsp. and see from there), optional
Instructions:
Place all ingredients in blender and process to mix. Place in refrigerator to chill until ready to serve.
Notes: And if you don’t want to open a whole can of coconut milk, just to use 1/4 cup, then you can easily use more almond milk instead. BUT! The eggnog won’t have that richness (that makes you only able to have a small glass…) to it.
