1 cup peanut butter
1 cup sugar
1 large egg, beaten
1 tsp. baking soda
Grease cookie sheets if you don’t use parchment or other
baking sheets. With an electric mixer, beat together sugar
and peanut butter. Add the beaten egg and baking soda and
mix until well combined. Roll into one-inch balls and press
with a fork. Bake at 350 degrees about 10 to 14 minutes
until puffed and golden. Makes about 36 cookies.
