Scaloppini
Jul. 10th, 2018 03:29 pmIf anyone wants to try it, this is The Two Jack's famous (in Northern California anyway) recipe. My dad cooked for them for several years:
Two Jacks Scaloppini
2 cans Cream of Tomato soup
2 cans Cream of Chicken or Mushroom soup
1 pound container sour cream
1 pound sliced mushrooms
1 diced bell pepper
1 diced onion
4 veal patties (like ground beef patties)
Garlic powder
Salt
Pepper
Sauté veal patties until cooked through and browned in oil. Set aside to drain on paper towels.
Sauté onion, bell pepper, and mushrooms in oil left from veal until almost tender.
In sauce pan mix together undiluted soups until bubbly.
While soup are heating, tear veal patties into bite-sized pieces.
When soups are bubbling, add garlic powder, pepper, and salt, mix well. Stir in veal and vegetables and heat through.
Remove from heat and add sour cream, stirring until well blended.
Serve with baked potato and salad.
Recipe may be doubled or tripled as needed/desired.
