Apricot Chicken

Ingredients
3/4 cup basmati rice
1 can (13.5 ounces) LITE coconut milk
Fine sea salt and freshly cracked pepper
1-pound boneless skinless chicken breasts OR 1 and 1/2 cups prepared rotisserie chicken (Note 1)
1 tablespoon + 2 teaspoons olive oil, separated
1 tablespoon freshly minced garlic (~3 cloves)
1 tablespoon freshly minced ginger (~1-inch piece)
2 tablespoons apricot preserves
4 tablespoons rice wine vinegar, separated
1 tablespoon lite soy sauce
1/4 to 1/2 teaspoon red pepper flakes (add to heat preference)
1 tablespoon cornstarch + 1/2 cup water
1 teaspoon white sugar
2 Persian cucumbers (or sub 1 English cucumber)
1 large ripe avocado
