Vegan Bigos (Polish Hunter's Stew)
Prep Time 20 minutes Cook Time 50 minutes Total Time 1 hour 10 minutes Servings 6

Ingredients

For the Smoky Baked Tofu
2 tablespoons soy sauce or tamari
1 tablespoon maple syrup
1 tablespoon red wine vinegar
1 teaspoon liquid smoke
1 teaspoon canola oil
1 teaspoon smoked paprika
1/4 teaspoon black pepper
1 (14 ounce) package extra firm tofu, pressed and cut into 1/2 inch cubes

For the Stew
2 tablespoons canola oil
1 medium onion, diced
2 medium carrots, sliced
4 garlic cloves, minced
1/2 cup dry red wine
3 cups vegetable broth
1 medium russet potato, scrubbed and cut into 1-inch pieces
2 cups chopped cabbage
2 tablespoons sweet paprika
1 teaspoon dried marjoram
1/2 teaspoon black pepper
1/2 teaspoon caraway seed
2 tablespoons vegan Worcestershire sauce
2 cups sauerkraut, including juice
1/3 cup finely diced dried prunes
1/4 cup tomato paste
Salt to taste

For Serving
Chopped fresh dill
Chopped fresh chives
