Whole Roast Duck with Hoisin Sauce
Serves 4
Ingredients
1 tablespoon kosher salt
2 cloves garlic, minced
2 teaspoons finely grated orange zest
1 1/4 teaspoon coriander seeds, lightly toasted
1 1/4 teaspoon Chinese five-spice powder
1/2 teaspoon freshly ground white pepper
1 Pekin (Long Island) duck (5 to 6 pounds), giblets removed
3 tablespoons hoisin sauce
2 tablespoons orange liqueur, such as Grand Marnier or Triple Sec (or you can substitute orange juice)
1 tablespoon honey
1 teaspoon toasted sesame oil
