Dried Cherry, Pecan, and Goat Cheese Spread
1 c. dried cherries, cranberries and/or gold raisins
1 c. white grape juice or water
8 oz. goat cheese, room temperature
½ c. pecans- lightly toasted, chopped
2 T. unsalted butter, soft
2 t. fresh thyme
Simmer cherries in juice until liquid is decreased to 1 T. Cool.
Combine with rest. Can do 2 days ahead. Serve on toasted
Baguettes, scones, or English muffins. Makes 1 1/2c.
