Serbian Sausages (Cevapcici)
1 ½ lbs (675 g) ground beef
1 lb (450 g) ground pork
½ lb (225 g) ground lamb
1 egg white
2-4 cloves garlic, finely chopped
1 tsp (5 ml) baking soda
Salt and freshly ground pepper to taste
Cayenne pepper to taste (optional)
Combine all the ingredients in a bowl and, using your hands,
mix until thoroughly combined. Form into sausages about 3
inches (8 cm) and ¾ inch (2 cm) thick. Cook over hot coals
or under a preheated broiler, turning occasionally, until cooked
through, about 15 to 20 minutes. Serves 4 to 6.
