Chik’n™, Pear And Gorgonzola On Mesclun
Servings:4 Preparation Time:15 minutes

Ingredients

1/2 cup olive oil vinaigrette salad dressing
2 Tbs chopped fresh basil
1 Tbs olive oil, divided
1 large sweet onion, thinly sliced and separated into rings
1 tsp sugar
1 red pear, cored and thinly sliced
1 1/2 cups Meal Starters Morningstar Farms® Meal Starters™ Chik’n Strips
6 cups mesclun or torn mixed spring greens
1/4 cup walnut pieces, toasted*
1/4 cup crumbled Gorgonzola cheese

Directions
1. In small bowl stir together salad dressing and basil. Set aside.
2. In large nonstick skillet heat 2 teaspoons of olive oil. Stir in onion and sugar. Cook over medium heat for 8 to 10 minutes or until golden brown, stirring frequently. Stir in pear slices, Chik’n Strips and remaining oil. Cook and stir for 1 to 2 minutes or until heated through.
3. Meanwhile, arrange mesclun on 4 serving plates. Top with pear mixture. Sprinkle with walnuts and cheese. Drizzle with salad dressing mixture. Serve immediately.
*NOTE: To toast walnuts, spread evenly on baking sheet. Bake at 350°F for 5 to 10 minutes or until light golden brown, stirring once or twice.

Vegetable Tian
(thinly sliced veggies topped with cheese and then roasted)...


Ingredients:

1 Tbsp. olive oil
1 medium yellow onion
1 tsp. minced garlic
1 medium zucchini
1 medium yellow squash
1 medium potato
1 medium tomato
1 tsp. dried thyme
to taste salt & pepper
1 cup shredded Italian cheese

Directions:

STEP 1: Preheat the oven to 180 (400 degrees f) Finely dice the onion and mince the garlic. Sauté both in a skillet with olive oil until softened (about five minutes).

STEP 2: While the onion and garlic are sautéing, thinly slice the rest of the vegetables.

STEP 3: Spray the inside of an 8x8 square or round baking dish with non-stick spray. Spread the softened onion and garlic in the bottom of the dish. Place the thinly sliced vegetables in the baking dish vertically, in an alternating pattern. Sprinkle generously with salt, pepper, and thyme.

STEP 4: Cover the dish with foil and bake for 30 minutes. Remove the foil, top with cheese and bake for another 15-20 minutes or until the cheese is golden brown
