Chipotle Sweet Potatoes

2-3 lbs (900-1350 g) sweet potatoes
1 canned chipotle in adobo sauce, mashed to a
paste, or more to taste
Butter at room temperature, to taste
Salt and freshly ground pepper to taste
Prick the sweet potatoes several times with a fork and bake in
a 350F (180C) oven until very soft, about 1 hour. Cool enough
to handle and peel. Place the flesh in a bowl and add the
remaining ingredients. Mash with a fork or potato masher, or
beat in an electric mixer until smooth. Reheat in the oven or
microwave if necessary. Serves 4 to 6.
