Papaya Fritters

1 cup (250 ml) all-purpose flour
1/2 cup (125 ml) milk
1 egg, beaten
2 Tbs (30 ml) sugar
A grating of fresh nutmeg
2 cups (500 ml) papaya, peeled and cubed
Oil for frying
Powdered (confectioner’s) sugar
Combine the flour, milk, egg, sugar, and nutmeg and stir until
smooth. Add the cubed papaya and toss to coat. Drop by
spoonfuls into hot oil and cook until golden brown. Turn and
brown the other side. Drain on paper towels and dust with
powdered sugar. Serves 4 to 6.
