Preheat oven to 375°F.
Combine ½ cup sugar and 1 teaspoon ground cinnamon in a small blow; mix well and set aside.
Cut each of 8 (8-inch) whole-grain flour tortillas into eighths using a serrated knife or pizza cutter. Arrange tortilla wedges in a single layer on two large baking sheets.
Spray tortilla wedges lightly with nonstick cooking spray; sprinkle immediately with cinnamon–sugar mixture.
Bake tortilla wedges in the preheated oven for 10 to 12 minutes, or until crisp. Makes 8 servings.
